Melon, Arugula and Prosciutto = Pure Summer Bliss

Summer is the season of the salad.  Simple, easy, and delicious.   Minimal mess, quick to put together, and incredibly fresh.  Here is one of my recent favorites. 


Arugula. Melon. Prosciutto.  The perfect blending of flavors in your mouth; salty, sweet, and the peppery bite of the greens.  Married together with a little balsamic vinaigrette.   Yum.  Add a glass of white wine and it's almost perfection. 


Tip: prosciutto intimidated me for awhile because the cost per pound is usually quite steep.  Now instead of asking for this meat by the pound I always order it by the slice (I usually get 5-6 slices at weekly grocery shop).   Slices are thin, so it's never very expensive (I usually spend around $4) and it always seems to be enough for a few salads or sandwiches throughout the week.


You could spice this salad up a bit by adding a cheese (maybe a shaved Pecorino?) and a few walnuts for a little crunch.
