Chocolate Biscotti

My best friend, Cody was in town this weekend and she is ah-mazing in the baking department.  So when she mentioned she saw a recipe for Dark Chocolate Biscotti and wanted to give them a shot. I was excited to be her official taste tester.


Ingredients:
2 c whole wheat flour
2 tbs flax seed
1/2 tsp baking soda
1/4 tsp salt
1/3 c sugar
1/3 c brown sugar
2 large egg whites
1 large egg
1 1/2 tsp vanilla
2/3 c dark chocolate (splurge and get the good chocolate it makes a big difference)
3/4 c raw almonds


Mix the eggs, sugar and vanilla in a bowl. Then add in the flour, flax seed, baking soda and salt and stir. Then you can fold in the dark chocolate and almonds.

Levi was basically falling out of his chair waiting to try the biscotti.

Form the biscotti mix into a 1 inch loaf and bake at 350 degrees for 28 minutes.


 Remove the biscotti from the oven and let it cool. Then slice diagonally into 1 inch pieces and cook for another 7-9  minutes on each side.


We have been enjoying these deliciousness with respective coffee and milk all week.  I also threw half of the batch in the freezer for next time company is in town. Yum!
