Simplest and Easiest Salad EVER

Kale.  It seems like it's everywhere these days.  And I've wanted to like it so badly!! I just haven't been able to figure out the best way to use it.  


For the past two months we've been getting a bunch of Russian kale every week, so I've had plenty of opportunities to practice.  For the longest time I really only used kale in quiche or a frittata. It was good but nothing that I craved or dreamed about.  Then I heard about this kale salad.  That's right.  Plain kale salad.  I promise it's good.  In fact, it's my new absolute favorite. 


Here's the recipe.  Are you ready??
You take your kale, wash it and cut up into fairly large bite size pieces.  Then you add some good olive oil and squeeze in half a lemon.  Next add a little salt and pepper to taste.  Toss it all up and let it sit for about 30 minutes.  This is the key.  For in this time the acid in the lemon will break down the bitterness in the kale a bit and make the taste amazing.



Then eat!!

The best part about this salad is that you can save the leftovers.  Usually lettuce gets limp and unappealing once it's put in the fridge over night.  Kale salad keeps its texture and it's taste.
