I am always looking for quick healthy breakfast ideas that can also be taken on the go. My parents were just out last week and my mom described an oatmeal "pancake" that she has been making in the morning that she has been digging. My mom is a personal trainer is eats super healthy so I figured I would give it a try as my breakfast of choices lately have been terrible the opposite of healthy.
Oatmeal Breakfast Bar Base:
1/2 cup Quick Oats
1/2 cup Unsweetened Apple Sauce
1/3 cup Egg Whites
Cinnamon
Vanilla Extract
Sweet Agave Nectar
Toppings of your choice:
Crasins
Rasins
Walnuts
Flax seed (I didn't add this but my mom uses it.)
Mix it all together in a bowl and cook on both sides in a pan like a pancake.
I really liked these bars and they reminded me of a healthier oatmeal cookie and who doesn't like a "cookie" for breakfast?
